It's very easy to unpublish a Rota using the selection tool.
To do this, first press the "Select" button
Then select the shifts you want (one by one, employee by employee or all shifts) and click on "Unpublish".
Employees will then be notified and shifts will be put back on your rota in "draft" mode.
